What makes them so green?  Well, they use local and organic produce and ingredients, and they use all-natural meat products: no hormones, no antibiotics, no steroids. They even offer the most extensive Gluten-Free menu in Texas. Energy wise, they supplement their electricity with 2.5KW solar modules and they also use 100% LED (light emitting diodes) for indoor and outdoor lighting. Pretty green right?

The Green Restaurant Association is a non-profit group that establishes the criteria restaurants must follow to become certified. In order to gain certification, the establishment must create programs in each of the categories, which are: Energy, Water, Waste, Disposables, Chemical & Pollution Reduction Sustainable Food, Sustainable Furnishings & Building Materials. That’s a lot of criteria, trust me!

But don’t you want to dine healthy as well? Look no further! They offer a large selection of vegetarian dishes and they use as much produce as they can from Gundermann Acres! Ruggles Green avoids the use of GMOs (Genetically Modified Organisms), and all of their  teas and coffees are organic and Fair Trade Certified. They also serve over 35 gluten free items!
